After years of research, passion and study in wine and food, we come on random circumstances(as often happens in life) to create and manage the PAPPOSILENO.
For those who like me, for years, has cultivated taste and good food the beginning of an adventure pursued for a long time. Finally a place where bringing together and provide years of knowledge and food practices, thousands of samples on tastings, hundreds of wineries and producers, many food stories, men and lands.
Trying through food and wine to discover the world, telling about men and cultures, without the arrogance of the masters or the arrogance of the teacher's pet, but overtly, by returning to food and wine the role of daily food.
Quality of life. Everyone talks about but only few can hit the mark.
Often remains just a way of saying without any meaning.
I believe that good food and to meet up around the table, daily venue, to be overtly shared between family and friends, is the best investment to improve the quality of our life.

Francesco Tarsia, several pasts between theater, design, tables covered with food, kitchens and cellars. In love with life and good food.
Professional sommelier and official taster of AIS (National Association of Sommeliers). Cheese taster of ONAF (National Organization Cheese tasters), has been Trustee and head of the Valdarno's Upper Hills Slow Food Convivium. Founder and president of the Terra e Territori Association for the promotion of the food culture. Designer, developer and contributor to several events also for food and wine. Many courses, seminars and updating masters in which he took part, amongst them: Slow Food Oil Master, Cellar's technician and operator Master, and Master in Recognition and use of epigean mushrooms and ARSIA's Truffles in cooking. Master of the National Academy of chilli pepper, etc. etc. ..
I think that we never know enough and that's why I continue to study, to cook and ... drink!
I love a good slice of bread, olive oil, tomatoes and mountain's oregano.
